The former owner of a Vancouver butcher shop has announced his latest venture, and it’s got one of the best backstories we’ve heard in a while. Say hello to Rosie’s BBQ and Smokehouse, a new food truck coming to the city that had a very interesting spot for a test kitchen. After all, turning your shed into a smoker just screams ‘I love BBQ’. And that’s exactly how Rosie’s BBQ was born.

So it makes sense that Karl Gregg truly does love BBQ. What’s more, the former butcher shop owner has made multiple ‘pilgrimages’ to Texas to study the art of slow-cooked BBQ, and he thinks he’s ready to show it off. Using locally sourced products whenever possible, Rosie’s will feature everything from brisket to baby back ribs to smoked pork steaks.

And, they’re opting for family-style meals meant to be enjoyed in the backyard, at the park or on a beach. So, alongside all the mouthwatering meats, you can also grab classic sides like pit beans, cornbread and coleslaw. If you’ve got the space for dessert, just know that homemade moon pies and banana pudding await you.

The current plan for Rosie’s BBQ is to do a little tour of some amazing Vancouver breweries, like Main Street, Strange Fellows and Parkside. So folks, get ready for another delicious BBQ option to start rolling around the city!
