Happy Monday Seattle! We know it’s not everyone’s favorite day of the week but today there’s a reason to celebrate. Why, you ask? Well because The Fairmont Olympic’s new restaurant, The George is finally opening after a much anticipated wait.

The opening marks the end of the hotels $25 million dollar restoration project that began in January 2020. The restoration also included another notable spot, The Founders Club which opened earlier this year. That means you have more than one reason to check out the new and improved Fairmont.

The George will be run by newly appointed Restaurant Executive Chef Thomas Cullen. Chef Cullen will set the new restaurant apart with a brasserie-inspired menu. Expect a showcase of PNW seafood, dry-aged meats, produce, sustainably foraged items, and more.

Some of the signature dishes include a traditional French bouillabaisse, The George seafood tower featuring a plethora of the sea’s best offerings, and Painted Hills bone-in short rib with heirloom carrots and natural jus. Of course, the menu will also be accompanied by an extensive bar program with hand-crafted signature cocktails created by Jesse Cyr, the hotel’s award-winning Beverage Curator.

To fully package the experience, guests will be able to dine in a stunning interior by Spanish design studio Lázaro Rosa Violán (LRV).
