Global hot pot restaurant is opening its first West Coast location in Bellevue

Bellevue will soon be home to one of Sichuan’s most popular restaurants. Shoo Loong Kan Hotpot is coming to Washington, making it the restaurant’s first West Coast location, and it will be in Vulcan Real Estate’s West Main building.

Not only will it be the first store on the West Coast, it will also be a flagship location.

“Opening in Vulcan’s West Main, Shoo Loong Kan’s first West Coast store will serve as a future flagship location. Shoo Loong Kan’s reputation precedes them and has made for swift expansion in the US, with several new leases this past year—Bellevue being the first,” shares Vulcan Real Estate.

“Their team looks forward to starting their tenure in Bellevue in the Year of the Dragon, representing prosperity. Bringing an acclaimed hot pot concept to Bellevue’s thriving culinary scene, we are excited for its opening this year.”

Shoo Loong Kan Hotpot originated in Sichuan in 2014. They say they started with “a handful of hotpot tables” and within five years, they expanded rapidly through their business franchise model.

“In 2017, we successfully expanded overseas and managed to open 1,000 outlets worldwide by 2020,” the restaurant says.

Currently, the restaurant has locations in Queens, NY, and Chicago, IL. Several locations are listed as “coming soon” including Houston and Dallas, TX, Costa Mesa, CA, and Las Vegas, NV.

The hot pot spot uses soup bases with “genuine flavors, fresh and healthy ingredients and a diverse and innovative array of products.” No wonder they’re expanding so fast.
