This Washington spot just ranked among the best sustainable US restaurants

Sustainability has been at the forefront of the changing world that we live in. It’s being championed in corporations, clothing brands, and of course, restaurants. Open Table looked at restaurants championing sustainability across the US and it turns out that one Washington spot made the cut.

In total, thirteen restaurants from coast to coast were mentioned. The local restaurant that made the list is one that you may or may not know of, Woodinville’s Barking Frog.

The wine country restaurant is run by chef Dylan Herrick who delivers a seasonal menu with innovative Northwestern fare, featuring items like vegetable flan and seared foie gras with sweet habanada pepper gelato. The dishes are created in partnership with local farmers, foragers, and food artisans.

That’s not all though, the restaurant also partners with a seed company to grow experimental potato, carrot, and pea varieties. Their goal is to enhance certain natural flavors and textures already found in seasonal crops. Even cooler is that Herrick often debuts the specialty produce on his menus before other farmers and chefs in the state.

So if you’re all about innovation, sustainability, and being the first to try something, a trip to Barking Frog isn’t such a bad idea. That or you can plan a trip to one of the other twelve restaurants mentioned which are as follows:
