After six months or so of waiting, a new French restaurant called Alouette is opening in Vancouver this weekend! This new spot is replacing the Copper Chimney, inside of Hotel Le Soleil. Curious about what to expect while you’re there? Keep reading!

Alouette (French for ‘lark’) is the newest concept from the folks at Executive Table Restaurants, which specializes in casual and fine dining experiences around Vancouver. Setting up exclusively in Executive Hotels, the current lineup includes the Mediterranean restaurant Hydra Estiatorio as well as North Vancouver’s Seaside Provisions.

And apparently, it’s time for a change at Hotel Le Soleil. Alouette will try to bring classic French bistro cuisine to Vancouver, with a healthy dose of West Coast ingredients and inspiration. Vancouver’s no stranger to French cuisine both high and low, so we’re excited to see what they’re bringing to the table.

Details about the menu are scarce, but diners will be able to enjoy brunch, lunch and dinner menus. As for specific options, the only ones that have been shared so far are Coquille (scallops) St. Jacques and the absolutely classic Steak Frites.

The restaurant is slated to open this weekend, so get ready to make a reservation!
