Dang guys, the Seattle food scene is really popping off these days. And while we’ve seen more pop-ups than ever in recent years it looks like a lot of them are looking to settle down. The newest pop-up to settle down is Karachi Cowboys, which will be gracing Capitol Hill’s Ballou Wright building.

If you haven’t heard of the pop-up before it’s known for combining Pakistani flavors, ingredients, and techniques with Texas BBQ. This unique mix comes from owner Nasir Zubair’s Pakistani, African American, and Texan background. And he has created a spot that has become wildly popular in its roving operations.

Pop-up menu items have included things like Aloo Sliders, Curried Nuts, and Bengali Pickled Cauliflower. We’re thinking that Zubair has a few things up his sleeve and will probably add a few more delicious items to the menu. And if you’re as excited about it as we are, you can actually contribute to the restaurant’s Kickstarter to help them make their dreams a reality.
