Pop-ups gone permanent, Seattle has seen a bunch of them this year. While we love them all, we’re particularly excited about this one. Blotto, the highly coveted naturally leavened sourdough pizza spot is no longer a roving vendor. As of last week, they’re the newest restaurant in Capitol Hill.

Blotto is known for its thin-crust New York and Neapolitan-style pizza which took Broadway Alley by storm. Like many other local pop-up spots, they were often sold out within hours. With a focus on quality over quantity and use of local ingredients, that’s not too surprising.

We’re happy that they’ve made the transition to a permanent spot because it means more pizza for all of us. But it’s also worth noting that the new Blotto also has a great selection of market items from both local and far away purveyors. You can grab coffee, sauces, bottles, brews, and more. Basically, your favorite artisanal pizza spot just got a whole lot better.
