Well, folks, one of Seattle’s most iconic restaurants is getting a big change. That’s right, Canlis head chef Brady Williams will be leaving in February to start his own restaurant. Talk about big New Years’ plans!
Williams came to Canlis as its sixth ever executive chef in 2015. But before then, he had worked at several fine-dining institutions in both Dallas and New York City. And it didn’t take long for Seattle to fall in love with his reinvention of the city’s class at Canlis. Not to mention he’s been a key figure in helping the restaurant get creative to survive the pandemic.

But times change and it’s completely understandable that he would want to open his own restaurant. After all, it’s the next logical step when working in the fine dining industry. So while there’s not a lot of details on the restaurant we do know it will be in Seattle proper. And we have a feeling whatever he does will be great.
Now with this in mind, Canlis is looking for a new head chef. So if you or someone you know happens to have extensive fine dining experience you might want to check out their opening. After all, it’s one of those once-in-a-lifetime job experiences.
