With so many restaurants closing in Seattle it’s always nice to see something new open. One of the newest spots we’ve heard about is Here Today Brewery which is slated to open in June 2021 on Seattle’s Waterfront. But this restaurant is unique in that it’s still looking for investors in order to open.
In fact, Here Today Brewery is looking to raise just over $700K which is a lot to invest in a sit-down restaurant concept. But it’s also important to remember that their focus is making beer so if they succeed, they could be a new staple in the Seattle craft beer scene. Either way, more kudos to them for following their dream. And on that note, the team of people behind this restaurant has some serious experience.

The team has won Spirited Awards, received James Beard nominations, been on Anthony Bourdain, and more according to their wefundr page. And on top of that, they’ve gone with an entirely vaporwave aesthetic so we’re sure this spot will be unique, to say the least. After all, you have to stand out somehow in this day and age right?
