Summer is always a season to look forward to but this summer is about to get a little bit sweeter (pun intended). Chef Rachel Yang of Joule and Revel and Pastry Chef Gabby Park formerly of Saint Bread are teaming up to bring you a whole new cake experience. Here’s what we know about Paper Cake Shop so far.
The shop will open on Stone Way, just a few blocks north of Joule according to the first Instagram post from Paper Cake Shop. Currently, the same post estimates a late summer 2023 opening.

The shop is unique in that it focuses on layer cake. Both Yang and Park come from Korean American backgrounds and are thrilled to “create a cake shop that blends traditional and innovative techniques”, they also share an appreciation for a wide range of flavors so get ready to experience cake like never before.
Some of the mentioned cake flavors include “Fancy Chips” which has a chocolate sponge, truffle potato chips, and salty malty frosting. Or try “Fruit Loops” with a lemon sponge, lemongrass lychee mousse, and raspberry buttercream. If that’s still not adventurous enough you can try the “Spice of Life” with coconut sponge, masala caramel, gingersnap streusel, and salty condensed milk frosting.
All in all, the duo wants to remind customers that every day is special and a reason to celebrate with cake. We’d have to agree and will keep you updated with any and all new information on the tasty addition to Seattle’s foodie scene.
