Seattle’s oldest craft distillery has officially opened a new restaurant on Capitol Hill. Owners Kirby Kallas-Lewis and KT Niehoff wanted to create a restaurant that was a “gathering space for the local community, where regulars can become friends over a cocktail or two.” Here’s a look at OOLA Capitol Hill.
OOLA Capitol Hill officially opened at the end of August. The space is full of tons of natural light thanks to large surrounding windows. The clean and minimal aesthetic helps to create a cozy yet focused atmosphere.

OOLA is more than just a restaurant, it’s also a bottle shop, cocktail bar, and tasting room. That means you’ll be able to enjoy eats and sample OOLA’s award-winning spirits. As for the menu, you can expect a “thoughtfully curated” hyper-local menu from Executive Chef, Liz Blacker formerly of Cafe Juanita and Eden Hill.
Bar seating is first come first serve and reservations can be made for up to six people.
