Toronto’s King West neighbourhood just got a new dining establishment and it goes by the name of Margo. Influenced by the diverse cultures, fresh ingredients, and flavours found on the Mediterranean Coastline, here’s what you need to know about the city’s newest dining destination.

INK Entertainment Group has announced its latest venture – Margo. Located on the fourth floor of Clio, the private members’ club, Margo will be open to the public on April 25th.

Described as a luxurious space, with vibrant hues and velvet accents, Clio not only captures a welcoming yet elegant environment but is sure to offer a memorable experience that’ll leave you wanting more.

As for the menu, it is curated by Executive Chef Marc Cheng who was previously at Patria, NAO Steakhouse and Kōst, and Chef de Cuisine Jo Castrinos.

You can expect seafood offerings like Whole Lobster Linguine made for two, Grilled Octopus, and Mediterranean Sea Bass; traditional and modernized Mediterranean plates like a flaming table side Saganaki, rack of Lamb, and Mushroom Kosheri, an Egyptian Street food dish with black truffles, according to the restaurant.

Along with the delicious menu comes a stunning cocktail and Mediterranean-inspired wine program, which includes “an Indigenous grape-based white from Mallorca, the famous Château Musar from Lebanon, a selection of Greek whites and reds, as well as a few classics from Bolgheri, Sicily and Provence.”

As for the cocktails specifically, they are inspired by the “vibrant flavours and colours of the Mediterranean region” such as Amara, a freshing cocktail made with Tsiporo Greek Moonshine; Oud Fashioned, presented with a tableside smoke show; and Viola, a modern take on a French 75 with gold flakes.

Margo is the first out of many new concepts INK is set to be launching in Toronto this year, like Mr. Vander, a new, late-night lounge, opening on the 2nd floor of Clio next month.

Other projects include an American concept Restaurant and Bar in the Financial District and a Supper Club in Midtown.
