This popular US lobster shack just opened in Seattle and here’s what to know

Gear up Seattle for a delicious piece of news. Luke’s Lobster is opening its 20th North American shack (and first location in the Pacific Northwest) and it happens to be in Seattle.

Yes, the popular Lobster shack and certified B Corp known for its authentic Maine-style lobster rolls is coming to Seattle on January 12, 2023. And they found the perfect place to fit right in, one of our fave areas in the city! Right beside the vibrant, historic and beautifully “nauti” Pike Place Market.

“When I visit Seattle, the first place I head is Pike Place Market,” says founder Luke Holden. “I feel an immediate connection to the fishmongers there who grew up on boats and in seafood facilities just like I did, and share my love of the ocean. I’m so excited to open a shack overlooking this awesome landmark.”

The Pike Place shack will serve up all their signatures and then some. Think lobster roll, crab and shrimp roll, lobster bisque by the cup, sourdough bread bowl and their award-winning New England clam chowder. You’ll also find a selection of wine and beer from local vineyards and microbreweries like Métier Brewing Co., plus they’ve partnered with Fathom Seafood to source the highest quality crab directly from the Puget Sound for a ‘Luke’s Lobster Seattle special’- Dungeness Crab Rolls.

Just in case you were wondering, their seafood tastes delicious for a reason or two.

First of all, they have a beautifully simple recipe. According to Luke, this involves “letting the slightly chilled lobster shine with nothing more than a warm, buttery griddled bun, a tiny swipe of mayo, a drizzle of lemon butter, and a dash of secret seasoning.”

The other is their unparalleled knowledge of, and connection to their sustainably sourced seafood. Keeping up with their commitment to sustainable sourcing, Luke and his team (including his two brothers and his Dad Jeff) buy directly from fishermen at wharves along the coast of Maine and Canada.

The lobster fishery has led the charge in implementing sustainability regulations as far back as the 1800s, including v-notching and throwing back egg-bearing females, setting a limit for lobster traps per fisherman, size restrictions, and more. They then handle their product with care throughout the entire process of steaming, hand-picking, packing, and shipping to their lobster shacks. The result is a deliciousness so divine, it’s like heaven in your mouth!

In addition to incredible eats, the space also brings all the chill maritime vibes. The cute and cozy coastal shack features Maine-built, reclaimed wood furniture and in-house steel fabrication. How fun!

The shack will be opening on January 12, 2023. So, gear up for some serious chowing down.
