With all the sunny weather we’ve had lately, there’s never been a better time to hit some patios. And soon, you’ll have another destination to add to your patio-hopping itinerary at the Fairmont Pac Rim.
The Fairmont Pac Rim Patio Pop-up is returning in just a few short weeks, bringing a talented slew of Vancouver’s Michelin-recognized chefs to the iconic hotel for six weeks.
In partnership with Westbank, the patio concept will feature summer-inspired dishes available for four days at a time.
Alongside the hosting home chef Hector Laguna of Botanist, the star-studded lineup includes Gus Stieffenhofer-Brandson (Published on Main), Lý Nguyen and Vincent Nguyen (Anh & Chi), Andrea Carlson (Burdock & Co), Lee Cooper (L’Abattoir), and Michael Zafirian (Bacaro).
The patio invites guests to immerse themselves in the “culinary fabric of the city,” according to a recent release, and support local artistry in Vancouver in all its forms.
Along with a weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck will serve a refreshing summer menu with outdoor dining in mind.
In addition to delicious food, guests can expect to sip on a selection of Malfy Gin cocktails created by Creative Beverage Director Grant Sceney. So whether you’re into G&Ts or spritzers, you’ll have something cold and fresh to enjoy alongside your meal.
As well, guests can choose from a selection of craft beers and local and international wines.
The six-week patio will kick off on Thursday, June 1st, and will run through Sunday, August 27th.
The Pac Rim Patio will be open from noon until 8 pm from Wednesday to Sunday, with daily live music on Fridays and Saturdays until 8 pm, and until 6 pm on Thursdays and Sundays.
Note that seating is first come first serve and weather dependent.
So there you have it, Vancouver. Your summertime patio dreams have been answered!
