Pho enthusiasts and vegans can rejoice in a brand new offering from the beloved Seattle Vietnamese restaurant Ba Bar. The local restaurant group’s South Lake Union location just opened a walk-up window geared towards vegans. It’s called Ba Bar Green and you’ll be able to get your hands on the menu starting November 12th.
According to an interview with Eater Seattle, owner Eric Bahn said the new addition comes with diners changing preferences. He stated “many are moving away from eating meat and are more curious about plant-based eating” and also mentioned “flexitarians” aka folks who are conscious about their meat consumption. And now those folks can follow their dining preferences and needs at a dedicated vegan outpost.

The new walk-up window will have both grab-and-go and made-to-order items for diners to choose from. Some of the menu items will include kabocha and sweet potato malay laksa, Singapore noodles, veggies, and JUST Egg as well as dan dan noodles with Beyond Meat. You’ll also be able to grab banh mi with options like soyrizo or braised tofu.
