6 insane at-home ice cream combinations that you need to try

Swear all you want by flans, soufflé and mille-feuilles but nothing soothes the soul quite like good ol’ ice cream. It’s probably the single most versatile food there is. If you are happy? You have ice cream. If you’re heartbroken? You have ice cream. Sad? Ice cream. Stressed? Ice cream.

Celebrating something? Ice cream. Curing boredom? Ice cream. This cold creamy treat is our choice of food for every mood.

Now, we are all for the classics, but you know us, we are suckers for a healthy dose of quirk. And God knows, we are in dire need of one right now. So, we are grateful to Foothills Creamery for helping us spice things up (in some cases, literally) a bit with some seriously insane and easy-to-make ice cream combos.

Why do we trust them with these ideas? Because they’ve been in the dairy industry for 50 years and are one of the rarest players in the market to offer 80 flavours of ice cream, sherbet, sorbet, and soft-serve!
Together we picked 6 of their best-selling flavours and turned them into unique, fun, and downright crazy recipes. Buckle up!

But first, an honest confession: tried ‘em all, loved ‘em all!

Old Fashioned Vanilla with pineapple, lemon juice, and ginger juice

We thought we’d kick off this list by giving some love to vanilla ice cream! All you have to do is take pieces of pineapple, preferably fresh to avoid sugar overload, then squeeze in a few drops of lemon juice and an equal portion of ginger juice. Mix all of this with Foothills Old Fashioned Vanilla ice cream and give your taste buds a nice kick.

Shark Attack with cheddar cheese and a sprinkle of cheesy crackers

For each scoop of Foothills Shark Attack, add about 1” x 1” cube of cheddar cheese (grated) and sprinkle it with coarsely crushed cheesy crackers. Think of this combo as a deconstructed cheesecake. The raspberry and vanilla in the ice cream take care of the fruity and creamy aspect, the cheddar cheese brings salt and, of course, the cheesy flavour and the crackers are the crunchy equivalents of the cheesecake base. A delight!

Maple Nut with Soy & Bacon

Drizzle a liberal amount of soy (regular, not dark) over your Foothills Maple Nut ice cream to make a nice sweet and tangy flavour. Then add a spoonful of bacon crumbs. Yes, this sounds crazy. And yes, it tastes crazy but crazy good.

Mint Chocolate Chip with caramelized cauliflower

This is simple but takes slightly longer to prepare. First, you caramelize the cauliflower by baking oil-drizzled, sugar-sprinkled cauliflower in a preheated oven at 425˚ F. Unless you want the strong olive oil flavour, it is better to use neutral flavoured vegetable oil. Then place the steamy, sweet cauliflower over your cold Foothills Mint Chocolate ice cream and revel.

Lactose-free Toasted Coconut with Balsamic and Sea Salt

If dairy isn’t exactly your thing, look no further, this last one is for you! We’ve had sea salt and caramel flavour for ages, it’s time we brought some of that punch to our Toasted Coconut too. Mix in a few drops of balsamic and add just a pinch of salt to your ice cream. If you find balsamic too pungent, you can even replace it with soy. 

All Canadian Moose with French Fries

Thanks to our crowded McD and Burger King trays, we’ve all tried soft-serve brushed fries at some point in life. This recipe is a legit version of that accident. For this combo, you need Foothills All Canadian Moose ice cream, obviously, and also about 10-12 extra crispy fries. Break the fries into bite-size pieces, add them to your chocolate-vanilla-peanut-butter-flavoured bowl and dig in.
