Bainbridge Island is already worth the visit but now foodies are going to have an extra reason to ride the ferry. Brendan McGill of Hitchcock is opening Seabird, a brand new restaurant in the former Hitchcock space. Here’s what you can expect.

Seabird is set to be a seafood and vegetable-focused restaurant that will open on May 26th. It’s a revitalization of the old Hitchcock space with a sharper menu and complete kitchen renovation and dining room refresh. Expect an overall PNW beach vibe with nautical-themed works of art.

So what can you expect to see on the menu? You’ll be able to find an iced shellfish section with a “rotating selection of local oysters, and other gems from the sea like spot prawns, geoduck, and green sea urchin.” Additionally, you’ll be able to find small plates like albacore tartare, octopus salad, chinook salmon Crudo, and more.

There will also of course also be large plates like wood-fired halibut with summer squash, black garlic mole, and squash blossom, as well as seared sturgeon with potato fondant, kumquat kosho beurre blanc, and roasted little gems among others. And yes, there’s a thirst-quenching wine and cocktail program that will also accompany the menu.
