For vegan and plant-based folks who have been anticipating the opening of ‘Folke’ in Kitsilano for the past couple of months, we’ve got some good news for you. Mark your calendars for Thursday, June 2nd – because the time has finally come!

Chef Colin Uyeda and Pricilla Deo are opening a community-oriented vegan restaurant in the spot previously occupied by Super Hiro Sushi. Their specialty? Bringing people together to appreciate the best produce and veggies that local farms have to offer.

Instead of recreating meat-based dishes to imitate the taste and texture of meat, Folke takes a different approach when designing its menu. The team has carefully selected a variety of plant-based dishes that highlight the quality and versatility of ingredients grown in the Vancouver area.

If you’re looking for something new and exciting when it comes to vegan eats, then look no further. Folke’s ever-changing menu is comprised of small plates like Chickpea Tofu, mushroom dumplings, and a mix of greens, beets, & pickles designed with the “sharing is caring” mentality.

In other words, no two meals at Folke will ever be the same!

Their beverage menu follows suit with a ton of unique craft beers, ciders, and wines to choose from. Guests can also sip on a refreshing cocktail or mocktail crafted with housemade sodas.

According to Uyeda and Deo, Folke’s kitchen staff will be the ones running the food to the tables, in an effort to establish genuine connections between guests and the team behind their meals. If you sit at the bar that overlooks the kitchen, you’ll have the added bonus of interacting with the chefs themselves!

Deep ocean blue walls, high wood tables, and seaweed art by Dana Mulder adorn Folke’s interior. If you ask us, the restaurant is shaping up to be a West Coast paradise if there ever was one.

Oh, and did we mention the wine wall? Looks like our Friday night plans are covered.
