Canada’s first-ever draught cocktail bar and bottle shop has opened in Toronto, and they’ve turned your favourite cocktails into a ready-to-serve format. Here’s what to know.

Introducing Civil Pours, the newest patio pop-up in Toronto that serves kegged cocktails, available on tap.

Civil Liberties Bar owner Nick Kennedy has teamed up with consumer goods execs and entrepreneurs Mary Beth and John Williamson, to bring the project to life and create what is Civil Pours Draught Cocktail Patio Bar and Bottle Shop.

What makes this spot stand out amongst the rest is the way they make their cocktails. Proprietary vacuum-distillation techniques are used to create what is described as “an unmatched depth of real flavour in cocktail form” made for kegs and bottles.

The cocktail menu includes an Old Fashioned, Espresso Martini, Margarita, Whiskey Sour, and Jalapeño Margarita.

There is also a spirit-free cocktail option and a snack menu.

Not only does this method make things easier on the bartender but it shifts the focus on offering stellar hospitality, knowing that each drink is made perfect and ready to go.

“Civil Pours is a natural extension of our team’s passion for cocktails and hospitality, bringing novel solutions to solve age-old bartending problems,” said Nick Kennedy, co-founder of Civil Pours and owner of Civil Liberties Bar.

“We’re excited to give our guests and peers a sneak peek into how we’re tapping into the leading edge of cocktail science and technology.”

Civil Pours is also committed to sustainability by using fresh ingredients that would otherwise go to waste like coffee grinds or citrus.

If you love your cocktails, guests can purchase Civil Pours ready-to-pour bottles to sip at home, such as their Old Fashioned, Espresso Martini, Margarita, and Whiskey Sour.

Does your cocktail taste familiar? According to the brand, Civil Pours’ ready-to-pour kegged cocktails can be found at Cactus Club, Drake Hotel, Fairmont Royal York, King Taps, and The Rec Room.

The 50-seat enclosed patio officially opened on August 2nd and will run until mid-September.
