Acclaimed Restaurateur opening new spot in the heart of West Seattle
From the mind behind some of the most acclaimed restaurants in Seattle comes Haymaker, opening in West Seattle late July. Executive Chef/Restaurateur Brian Clevenger has made a name for himself by taking pasta, seafood, and locally-inspired dishes to new heights. In plain English, this is gonna be good. Let’s take a closer look at what Haymaker will offer.
Firstly, the main menu is expected to lean heavily on grilled entrées coupled with locally-sourced vegetables. Expect New York steak & fries; Copper River Salmon with wild mushrooms, artichokes, and fish broth; and grilled Pork Collar with mission figs and polenta. Okay, so that sounds like a pretty tasty angle for a menu. That being said, what’s the angle for the restaurant? Well, let’s find out!
The name Haymaker is a direct nod to the five restaurants that Clevenger has already opened up in town. Those are Vendemmia, Raccolto, Le Messe, and G.H. Pasta Co, and East Anchor Seafood. Although four of those follow an obvious trend of Italian-focused restos, Haymaker is American-focused. Go ahead, taste the patriotism!
On top of an intriguing entrée menu, Haymaker has an impressive group of hand-crafted cocktails. Showcasing both local and worldly spirits, you’ll be able to sip on tastes from Seattle & beyond. Lastly, they’ll be serving brunch! From 10 am – 2 pm on the weekends, Haymaker will be serving up tons of classic dishes. Sure enough, it looks like you’ve got a new spot to add to your summer bucket-food-list!
Obviously, we’ll keep an eye on an exact opening date for Haymaker. In the meantime, keep eating your hearts out, Seattle!
