Patio-hopping is a quintessential summertime experience in Vancouver, and now you can add another to your list this season. Fairmont Pacific Rim has partnered with Oakridge and Westbank to create a unique pop-up patio, complete with delicious fare and agave-focused libations.
Best of all? The patio is opening this week on Thursday, June 9th at noon. Mark your calendars, folks!

Executive Chef Damon Campbell’s playful eats and drinks take centre stage, including Fairmont signatures like the Ahi Tuna Poke Bowl with ginger rice, the Crispy Thai Chicken Wings with soya lime and cilantro, and the West Coast Crab & Shrimp Sandwich. If you’re reading this on an empty stomach, we truly apologize.
Accompanying this delicious spread is the ultimate cocktail line-up. Creative Beverage Director Grant Sceney has put together a list of tequila, mezcal, and Cointreau-based drinks, including specialty margaritas, and a selection of craft beers and international wines.
“We are thrilled to welcome guests back to the front plaza for our third summer pop-up patio,” says Regional Vice President and Fairmont Pacific Rim General Manager, Jens Moesker. “Chef Damon and the entire Fairmont team have created something special where hotel guests – and the entire Vancouver community – can come together, beat the summer heat, and enjoy some great food and drinks, all the while enjoying live music and other programming.”

The Pacific Rim Plaza derives its design inspo from the rice terraces of Southeast Asia and the feel of the coastal temperate rainforests of BC. The result? A cool, grassy patio with over 50 seats scattered across carved hills with individual fire pits, lounge areas, and more.

So, here’s the lowdown. The pop-up patio will be open Thursday to Sunday from noon until 8 pm, with live music daily. Guests will also have the option of attending outdoor fitness classes presented by House Concepts on June 11th for Global Wellness Day.
Remember, patio seating is on a first-come, first-serve basis. Stay tuned via their Instagram for capacity updates and weather updates shared in real-time. Even if Raincouver does make a surprise appearance, there’s always the Lobby Lounge and RawBar to consider.
